Chai Ice Cream recipe

Ice-cream is a universally loved dessert, the craved solution for every thinkable problem. Had a rough day? Have a nice bowl of ice-cream. Break-up? Oh, there’s a tub of ice-cream waiting to comfort you. Mood swings? You guessed it right- Ice-Cream!! And what would be better than to have your favourite dessert served in the flavour of your most savoured beverage? Chai Ice Cream is the delectable dessert you have been missing out on if you haven’t tried it yet!

Wait, did we mention you can savour it from the comfort of your very own home, with just a little magic of your cooking? Oh well, it’s a win-win. Here is the recipe to an easy homemade ice cream:



  • 2 cups of Cream
  • 1 cup of Milk
  • ½ teaspoon nutmeg and cinnamon powder (toasted)
  • ½ teaspoon cloves ground powdered
  • ¾ teaspoon cardamom pods toasted
  • 2 tablespoons grated ginger
  • ¼ cup tea leaves (Buy Chai Mixes from Chai Buddy now!)
  • 6 egg yolks
  • ¾ cup sugar
  • ¾ teaspoon salt



Step 1:

 In a medium saucepan, bring cream and milk to a simmer. Add toasted spice powders and stir into dairy along with cinnamon and ginger. Bring the mixture to a boil, then remove from heat and cover to steep for 45 minutes.

Step 2:

After 45 minutes, give the mixture a good boil again and stir in tea leaves. Cover and let steep for 15 minutes.

Step 3:

Pour dairy through a fine mesh strainer into a measuring cup or bowl, pressing on tea leaves with a spoon to extract all liquid. In a clean medium saucepan, whisk together egg yolks and sugar until pale in colour and slightly thickened. Slowly add strained dairy, whisking constantly.

Step 4:

Heat mixture on medium heat, stirring frequently, until a custard forms on the back of a spoon and a swiped finger leaves a clean line. Stir in salt to taste, then strain custard into an airtight container and chill overnight.

The next day, churn the ice cream in the churner and transfer it to an airtight container and chill in freezer for at least 4 hours before serving.

Be creative with your dish and garnish it with some extra whipped cream or chocolate/ caramel syrup to add to the taste!
